Sausage peppers and potatoes

Got it — here’s a straightforward, classic version you can cook without overthinking it.


Sausage, Peppers & Potatoes

Ingredients

  • 1 lb Italian sausage (sweet or hot)
  • 4–5 medium potatoes, cut into chunks
  • 2–3 bell peppers, sliced
  • 1 large onion, sliced
  • 3 tbsp olive oil
  • Salt & black pepper
  • 1 tsp Italian seasoning
  • Optional: garlic, paprika, red pepper flakes

How to Make It

  1. Preheat oven to 400°F (205°C).
  2. Brown sausage in a skillet until lightly browned; remove and slice.
  3. Toss vegetables with olive oil, salt, pepper, and seasoning.
  4. Combine everything on a baking sheet.
  5. Roast 35–45 minutes, stirring once, until potatoes are tender and crispy.
  6. Serve hot with bread or on its own.

Notes

  • Want it crispier? Use 425°F for the last 10 minutes.
  • Add garlic in the last 10 minutes so it doesn’t burn.
  • Finish with Parmesan or parsley if you want.
