🥘 Sausage, Green Bean & Potato Casserole

This Sausage Green Bean Potato Casserole is a hearty, one-dish comfort meal. Tender potatoes, savory sausage, and crisp-tender green beans come together in a creamy, cheesy sauce for a simple yet satisfying dinner.


🥄 Ingredients (Serves 4–6)

  • 1 lb sausage (smoked, Italian, or breakfast sausage), sliced or crumbled
  • 1½ lbs potatoes, peeled and diced
  • 1 lb green beans, trimmed and cut into 2-inch pieces
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese (or cheese of choice)
  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup
  • ½ cup milk
  • 1 tsp dried thyme or Italian seasoning
  • Salt & pepper, to taste
  • 2 tbsp butter or olive oil
  • Optional topping: breadcrumbs or crushed fried onions for extra crunch

👩‍🍳 Instructions

1️⃣ Pre-cook ingredients:

  • Boil diced potatoes in salted water 8–10 minutes until just tender; drain.
  • Blanch green beans in boiling water 3–4 minutes; drain and set aside.

2️⃣ Cook sausage & onions:

  • In a skillet, heat butter or oil over medium heat.
  • Cook sausage until browned; remove excess fat if necessary.
  • Add onion and garlic; sauté 2–3 minutes until softened.

3️⃣ Mix casserole:

  • In a large bowl, combine potatoes, green beans, sausage mixture, soup, milk, seasonings, and ½ cup cheese. Mix well.

4️⃣ Assemble & bake:

  • Preheat oven to 350°F (175°C).
  • Transfer mixture to a greased 9×13-inch baking dish.
  • Top with remaining cheese and optional breadcrumbs or fried onions.
  • Bake 25–30 minutes until bubbly and golden on top.

5️⃣ Serve:

  • Let rest 5 minutes before serving for easier slicing.

  • Potato choice: Yukon Gold or red potatoes hold their shape well.
  • Sausage options: Smoked sausage adds extra depth; Italian sausage gives more spice.
