This is a hearty, comforting casserole that combines savory sausage, tender green beans, and creamy potatoes baked together, often topped with cheese or breadcrumbs for a crispy finish. It’s perfect for family dinners or potlucks.


🥓 Ingredients

  • 1 lb (450 g) sausage (Italian, smoked, or breakfast sausage), sliced or crumbled
  • 4–5 medium potatoes, peeled and thinly sliced or cubed
  • 2 cups green beans, trimmed (fresh or frozen)
  • 1 small onion, diced
  • 2–3 cloves garlic, minced
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1 cup cream, milk, or cream of mushroom soup
  • 1 tsp dried thyme or Italian seasoning
  • Salt & pepper to taste
  • Optional: breadcrumbs for topping

👩‍🍳 Instructions

  1. Preheat Oven: 350°F (175°C).
  2. Cook Sausage: Brown sausage in a skillet until cooked through. Remove and set aside.
  3. Sauté Veggies: In the same skillet, cook onion and garlic until soft.
  4. Layer Casserole:
    • Potatoes on the bottom
    • Green beans next
    • Sausage and sautéed onions on top
  5. Add Cream/Cheese: Pour cream or soup over layers and sprinkle cheese on top.
  6. Bake: Cover with foil and bake 40–50 minutes until potatoes are tender. Remove foil last 10 minutes to brown the top.
  7. Optional Crunch: Add breadcrumbs in the last 10 minutes of baking.
