Sausage bake

Posted on February 20, 2026 by Admin

Here’s a hearty and easy Sausage Bake recipe—perfect for breakfast, brunch, or a comforting dinner.

Ingredients (Serves 4–6)

  • 1 lb (450 g) breakfast sausage (mild or spicy, pork or turkey)
  • 6 large eggs
  • 1/2 cup milk
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onion
  • 1 cup diced potatoes (optional, for extra heartiness)
  • Salt and black pepper, to taste
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon paprika (optional)
  • Fresh parsley, for garnish

Instructions

1. Preheat the oven

  • Preheat to 375°F (190°C).
  • Grease a 9×13-inch baking dish.

2. Cook the sausage and vegetables

  • In a skillet over medium heat, cook sausage until browned.
  • Add diced onions, bell peppers, and potatoes (if using). Cook until vegetables are softened.

3. Mix eggs and seasonings

  • In a bowl, whisk together eggs, milk, garlic powder, paprika, salt, and black pepper.

4. Assemble the bake

  • Spread the cooked sausage and vegetables evenly in the prepared baking dish.
  • Pour the egg mixture over the top.
  • Sprinkle shredded cheese evenly on top.

5. Bake

  • Bake for 25–30 minutes, or until eggs are set and the top is golden.

6. Serve

  • Let cool for a few minutes, then slice and serve. Garnish with fresh parsley.

💡 Tips

  • Add cooked bacon or ham for extra flavor.
  • Use hash browns instead of diced potatoes for quicker prep.
  • This dish can be made ahead: assemble the night before and bake in the morning.
  • Leftovers reheat well in the microwave or oven.

If you want, I can also give a slow-cooker version of a sausage breakfast casserole that’s set-it-and-forget-it overnight—perfect for busy mornings or brunch.

Do you want me to provide that version?
