🥘 Sausage and Potatoes

A hearty, one-pan comfort dish — crispy potatoes roasted with flavorful sausage and aromatic seasonings.


📝 Ingredients

  • 1 lb sausage (Italian, smoked, or breakfast links, sliced or in rounds)
  • 1.5 lbs potatoes (Yukon gold, red, or russet), diced into 1-inch cubes
  • 1 medium onion, chopped
  • 2–3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried thyme or rosemary
  • Salt and black pepper to taste
  • Optional: bell peppers or carrots for extra veggies

👩‍🍳 Instructions

  1. Preheat oven: 400°F (200°C).
  2. Prepare potatoes: Toss diced potatoes with olive oil, paprika, thyme, salt, and pepper. Spread evenly on a baking sheet.
  3. Add sausage and onions: Place sausage slices and chopped onions among the potatoes. Toss gently.
  4. Bake: 25–30 minutes, stirring halfway, until potatoes are golden and tender and sausage is cooked through.
  5. Add garlic: Stir in minced garlic during the last 5 minutes of baking.

✨ Tips

  • For crispier potatoes, parboil them 5 minutes before roasting.
  • Use smoked sausage for a deeper flavor.
  • Garnish with fresh parsley or a sprinkle of cheese before serving.

This dish can also be cooked entirely on the stovetop for a faster version.
