Sausage and Potato Skillet

Ingredients

  • 1 lb sausage (Italian, smoked, or your favorite), sliced into Β½-inch rounds
  • 1 lb potatoes (Yukon Gold or red), diced small for faster cooking
  • 1 small onion, diced
  • 1 bell pepper, diced (optional)
  • 2–3 cloves garlic, minced

Instructions

1. Cook the Sausage

  • Heat 1 tbsp oil in a large skillet over medium-high heat.
  • Add sausage slices, cook until browned on both sides (5–7 min).
  • Remove sausage and set aside (we’ll finish with everything together).

2. Cook the Potatoes

  • In the same skillet, add remaining oil if needed.
  • Add diced potatoes, season with salt, pepper, smoked paprika.
  • Cook 10–12 minutes, stirring occasionally, until golden and crisp on edges.

3. Add Veggies

  • Toss in onions, bell peppers, garlic.
  • Cook 3–5 minutes until softened.

4. Combine

  • Return sausage to the skillet.
  • Stir everything together and cook 2–3 minutes so flavors meld.

5. Finish & Serve

  • Sprinkle with fresh parsley.
  • Optional: drizzle with a little hot sauce or shredded cheese.

  • Small dice = crispier potatoes.
  • Par-boil potatoes 5 min before pan-frying for extra crisp edges.
  • Use smoked sausage or kielbasa for extra flavor punch.
