Ohhh yes—sausage and peppers 🔥 Simple, bold, and absolutely satisfying. Here’s a classic skillet version that works as a main, sandwich filling, or meal prep hero.


Classic Sausage and Peppers

Ingredients (serves 4)

  • 1½–2 lbs Italian sausage (sweet, mild, or hot)
  • 2 tbsp olive oil
  • 2–3 bell peppers (mix of red, green, yellow), sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • Salt & black pepper, to taste
  • ½ tsp dried oregano or Italian seasoning
  • Optional: red pepper flakes, to taste
  • Optional: ½ cup crushed tomatoes or marinara

Instructions

1. Brown the sausage

  • Heat 1 tbsp olive oil in a large skillet over medium heat.
  • Add sausages and brown on all sides (about 6–8 minutes).
  • Remove sausages and slice into chunks (or leave whole).

2. Cook peppers & onions

  • Add remaining oil to the same skillet.
  • Sauté onions 3–4 minutes until soft.
  • Add peppers and cook 5–7 minutes until tender with a little bite.
  • Stir in garlic, oregano, salt, pepper, and red pepper flakes.

3. Combine

  • Return sausage to the pan.
  • Add crushed tomatoes or marinara if using.
  • Simmer 10–15 minutes until sausage is fully cooked and flavors meld.

Serving Ideas

  • On hoagie rolls with melted provolone 🥖
  • Over pasta or rice
  • With roasted potatoes
  • Low-carb: straight from the skillet 😄

Tips

🔥 Cast iron gives great browning
🌶️ Use hot sausage + red pepper flakes for heat
🍅 A little tomato adds saucy richness without overpowering
🧀 Finish with provolone or mozzarella if serving as sandwiches
