Salmon with Asparagus

Serves: 2–4

Ingredients

  • 2–4 salmon fillets (6 oz each)

  • Juice of ½ lemon
  • Salt & pepper, to taste

Instructions

1. Preheat oven (for baked version)

  • Oven: 400°F (200°C)

2. Prep asparagus

  • Toss asparagus with 1 tbsp olive oil, salt, and pepper.
  • Spread on a baking sheet in a single layer.

3. Prep salmon

  • Pat salmon dry, season with salt, pepper, garlic, and lemon zest.
  • Drizzle with 1 tbsp olive oil.

4. Bake

  • Place salmon on the same baking sheet (or a separate one).
  • Bake 12–15 minutes, until salmon flakes easily with a fork and asparagus is tender.

5. Stovetop option

  1. Heat 1 tbsp olive oil in a skillet over medium-high.
  2. Cook salmon skin-side down 4–5 minutes, flip and cook 3–4 minutes.
  3. Sauté asparagus in remaining oil 3–4 minutes until crisp-tender.

6. Finish

  • Drizzle lemon juice over salmon and asparagus.
  • Garnish with fresh herbs.
  • Serve immediately with rice, quinoa, or roasted potatoes.

Tips & Variations

  • Garlic butter sauce: Melt 2 tbsp butter with garlic and pour over salmon before serving.
  • Honey mustard glaze: Brush salmon with a mixture of honey, mustard, and lemon before baking.
  • Sheet-pan meal: Add baby potatoes or cherry tomatoes for an all-in-one dinner.
  • Crispy skin: For extra crispy salmon, pat dry and sear skin in a hot pan before baking.
