Here’s a comforting Rotisserie Chicken and Stuffing Casserole — quick, flavorful, and perfect for using leftover chicken.


🍗 Rotisserie Chicken and Stuffing Casserole

Ingredients (Serves 4–6)

  • 2 cups cooked rotisserie chicken, shredded
  • 1 box (about 6 oz) stuffing mix (herb or chicken-flavored)
  • 1 1/2 cups chicken broth
  • 1/2 cup milk
  • 1/2 cup sour cream or cream of chicken soup
  • 1/2 cup shredded cheddar cheese (optional)
  • 1/2 cup diced onion (optional)
  • 1/2 cup diced celery (optional)
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme or poultry seasoning
  • 2 tbsp butter, melted

Instructions

1️⃣ Preheat Oven

  • Preheat oven to 350°F (175°C).
  • Grease a 9×13-inch baking dish.

2️⃣ Prepare Stuffing

  • Prepare stuffing mix according to package instructions, substituting part of the water with chicken broth and milk for extra creaminess.
  • Stir in butter, diced onion, celery, thyme, and pepper.

3️⃣ Assemble Casserole

  • Spread half of the stuffing mixture on the bottom of the baking dish.
  • Layer shredded rotisserie chicken over stuffing.
  • Mix sour cream (or cream of chicken) with a little broth and pour evenly over chicken.
  • Top with remaining stuffing.
  • Sprinkle shredded cheese on top if desired.

4️⃣ Bake

  • Cover with foil and bake 25–30 minutes.
  • Remove foil and bake an additional 10–15 minutes until top is golden and bubbly.

5️⃣ Serve

  • Let casserole rest 5 minutes before serving.
  • Serve with a side salad or steamed vegetables for a complete meal.

  • Vegetables: Add peas, carrots, or mushrooms for extra nutrition.
  • Creamier casserole: Mix 1/2 cup cream cheese into the sour cream layer.
  • Herb twist: Add rosemary, sage, or parsley to the stuffing mix.
  • Leftover-friendly: Works great with any cooked chicken or turkey.
