Crispy Roasted Potatoes

Serves: 4

Ingredients

  • 2 lbs potatoes (Yukon Gold or red work great)
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Optional: rosemary, thyme, or parmesan

Instructions

  1. Preheat oven
    • 425°F (220°C). Line a baking sheet with parchment or foil.
  2. Prep potatoes
    • Cut into 1–1½ inch chunks (keep sizes even).
    • Optional but elite: parboil 8–10 minutes, drain, rough them up.
  3. Season
    • Toss potatoes with olive oil, salt, pepper, garlic powder, and paprika.
  4. Roast
    • Spread in a single layer (don’t crowd).
    • Roast 35–45 minutes, flipping halfway, until golden and crispy.
  5. Finish
    • Sprinkle herbs, parmesan, or flaky salt while hot.
