Here’s a simple, crispy and flavorful Potatoes and Onions recipe—perfect as a side dish 🥔🧅

Ingredients (Serves 2–4)

  • 4 medium potatoes (Yukon gold, russet, or red), diced into ½-inch cubes
  • 1 large onion, sliced thin
  • 2–3 tbsp olive oil or butter
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder (optional)
  • 1 tsp paprika or smoked paprika (optional)
  • Fresh herbs like rosemary, thyme, or parsley (optional)

Instructions

  1. Prep the Veggies
    • Wash and dice potatoes into even cubes for even cooking.
    • Slice onions thinly.
  2. Cook
    Option 1 – Skillet (Crispy & Caramelized):

    • Heat oil or butter in a large skillet over medium heat.
    • Add potatoes, season with salt, pepper, garlic powder, and paprika.
    • Cook 15–20 minutes, stirring occasionally, until potatoes start to soften.
    • Add onions and cook another 10 minutes until potatoes are golden brown and onions are caramelized.

    Option 2 – Oven Roasted:

    • Preheat oven to 425°F (220°C).
    • Toss potatoes and onions with oil, salt, pepper, and optional spices.
    • Spread on a baking sheet in a single layer.
    • Roast 25–35 minutes, stirring halfway, until potatoes are tender and golden.
  3. Serve
    • Sprinkle with fresh herbs if desired.
    • Serve as a side with eggs, steak, chicken, or fish.

Tips & Variations

  • Extra crispy: Parboil potatoes for 5 minutes before roasting or skillet cooking.
  • Cheesy: Sprinkle shredded cheddar or Parmesan over the potatoes in the last 5 minutes of cooking.
  • Add veggies: Bell peppers, mushrooms, or zucchini can be added for extra flavor.
  • Spicy kick: Add cayenne, chili powder, or smoked paprika for heat.

If you want, I can give a Cajun-style Potatoes and Onions version that’s extra flavorful and slightly spicy—perfect for pairing with steak or chicken.

Do you want me to provide that version?
