Here’s a crispy potatoes and onions recipe—perfect as a breakfast side or with dinner.


Fried Potatoes & Onions

Ingredients (serves 4)

  • 4 medium potatoes (Russet or Yukon Gold)
  • 1 large onion, sliced
  • 3 tbsp oil or butter (or a mix of both)
  • Salt and pepper, to taste
  • Optional seasonings: garlic powder, paprika, onion powder

Instructions

  1. Prep the potatoes:
    • Peel or leave skins on.
    • Slice thin or dice evenly.
    • Rinse in cold water and pat completely dry (this helps crisp them).
  2. Cook the potatoes:
    • Heat oil/butter in a large skillet over medium heat.
    • Add potatoes in a single layer.
    • Cover and cook 8–10 minutes, stirring occasionally, until starting to soften.
  3. Add onions:
    • Stir in sliced onions.
    • Cook uncovered another 10–15 minutes, stirring occasionally, until potatoes are golden and onions are caramelized.
  4. Season and serve:
    • Season with salt, pepper, and any extras.
    • Serve hot.

Pro Tips

  • Don’t stir too often—let potatoes brown
  • Cast iron skillet gives the best crust
  • Add a lid early to steam, remove later to crisp
