🥔 Potato Slices in a Muffin Pan (Crispy Mini Potato Cups)

Perfect for bite-sized snacks or a fun side dish — crispy on the edges, soft inside.


🛒 Ingredients (Makes 6–8 cups)

  • 2–3 medium potatoes, thinly sliced
  • 2–3 tbsp olive oil or melted butter
  • Salt & black pepper
  • Optional: garlic powder, paprika, or rosemary
  • Optional toppings: shredded cheese, chopped bacon, chives, sour cream

🔥 Instructions

1️⃣ Preheat oven to 400°F (200°C).
Grease a muffin pan lightly with oil or nonstick spray.

2️⃣ Prepare potatoes

  • Thinly slice potatoes (¼ inch or less).
  • Toss in olive oil, salt, pepper, and optional seasonings.

3️⃣ Layer in muffin pan

  • Arrange slices vertically or in a slightly overlapping circular pattern in each cup.
  • Press down gently to compact.

4️⃣ Bake

  • 25–35 minutes until edges are golden and crisp, center is tender.
  • Optional: add cheese during last 5 minutes of baking.

5️⃣ Serve

  • Let cool 5 minutes.
  • Carefully remove with a small spoon or knife.
  • Top with bacon, sour cream, or chives if desired.

🌿 Tips

  • Use a mandoline slicer for uniform thickness.
  • Soak raw slices in cold water 15 minutes to remove starch for extra crispiness.
  • Don’t overcrowd each muffin cup — thinner layers crisp better.
