Basic Potato Pancake Recipe (Serves 4)

  • Vegetable oil, for frying

Instructions

  1. Grate the potatoes:
    • Peel and grate potatoes. If using onion, grate it as well.
    • Place in a clean kitchen towel and squeeze out excess liquid.
  2. Mix the batter:
    • In a bowl, combine grated potatoes and onion with egg, flour, salt, and pepper. Mix until well combined.
  3. Heat oil:
    • Heat a thin layer of vegetable oil in a skillet over medium-high heat.
  4. Fry pancakes:
    • Spoon a small amount of batter into the skillet, flattening it into a thin circle.
    • Fry 3–4 minutes per side until golden brown and crispy.
  5. Drain & serve:
    • Remove from skillet and place on paper towels to drain excess oil.
    • Serve hot with sour cream, applesauce, or your preferred topping.
