Here’s a simple and tasty recipe for potato fritters — crispy on the outside, soft on the inside:


Ingredients (Serves 4)

  • 2 large potatoes, peeled and grated
  • 1 small onion, grated or finely chopped
  • 1 egg, lightly beaten
  • 3–4 tbsp all-purpose flour (adjust for consistency)
  • Salt and pepper, to taste
  • 1/4 tsp garlic powder (optional)
  • Oil for frying (vegetable or canola)

Instructions

  1. Prepare the potatoes:
    • Grate the potatoes and squeeze out excess moisture using a clean kitchen towel or paper towels.
  2. Mix ingredients:
    • In a bowl, combine grated potatoes, onion, egg, flour, salt, pepper, and garlic powder. Mix until it forms a sticky but workable batter.
  3. Heat oil:
    • Heat 2–3 tbsp oil in a skillet over medium heat.
  4. Form and fry fritters:
    • Scoop 2–3 tbsp of the potato mixture and flatten slightly in the pan.
    • Fry 3–4 minutes per side until golden brown and crispy.
    • Transfer to a paper towel-lined plate to drain excess oil.
  5. Serve:
    • Serve hot with sour cream, applesauce, or your favorite dipping sauce.

✅ Tips:

  • For extra crispiness, fry in small batches and don’t overcrowd the pan.
  • You can add chopped herbs like parsley or chives for extra flavor.
  • Make them oven-baked by spraying lightly with oil and baking at 425°F (220°C) for 20–25 minutes, flipping halfway.
