Pot Pie 🥧🍗🥕
Pot pie is a classic comfort dish featuring tender meat and vegetables in a creamy gravy, all baked inside a flaky pastry crust. Chicken is most common, but beef, turkey, or vegetarian versions also work beautifully.
Ingredients
For the Filling
- 2 cups cooked chicken, diced (or beef/turkey)
- 1 cup carrots, diced
- 1 cup peas
- 1 cup potatoes, diced (optional)
- ½ cup onion, chopped
- ½ cup celery, chopped
- 4 tbsp butter
- ¼ cup all-purpose flour
- 2 cups chicken broth
- ½ cup milk
- Salt and black pepper to taste
- 1 tsp dried thyme (optional)
For the Crust
- 1 sheet puff pastry or homemade pie crust
- 1 egg, beaten (for egg wash)
Instructions
- Prepare the filling
- Melt butter in a skillet over medium heat.
- Sauté onions, carrots, celery, and potatoes until slightly tender.
- Stir in flour and cook 1–2 minutes.
- Gradually add chicken broth and milk, stirring until thickened.
- Add cooked chicken, peas, thyme, salt, and pepper. Remove from heat.
- Assemble the pot pie
- Preheat oven to 400°F (200°C).
- Pour filling into a baking dish.
- Cover with puff pastry or pie crust, trimming edges and pressing to seal. Cut slits for steam to escape.
- Brush top with beaten egg for a golden finish.
- Bake
Bake 25–30 minutes, or until crust is golden and filling is bubbling. Let cool 5 minutes before serving.
