Garlic Herb Pork Roast

Ingredients

  • 1.5–2 kg pork roast (shoulder or loin)
  • 4–5 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried rosemary (or thyme)
  • 1 onion, sliced
  • 1 cup chicken or vegetable broth
  • 2 carrots, chopped (optional)
  • 3–4 potatoes, chopped (optional)

Instructions (Oven Method)

  1. Preheat oven
    Preheat to 180Β°C / 350Β°F.
  2. Season the pork
    Mix olive oil, garlic, salt, pepper, paprika, and rosemary. Rub it all over the pork roast.
  3. Prepare roasting pan
    Place onion, carrots, and potatoes in the bottom of a roasting pan. Put the pork on top.
  4. Add liquid
    Pour broth into the pan (not over the pork).
  5. Roast
    Cook for 1.5–2 hours, or until internal temperature reaches 63–70Β°C (145–160Β°F) depending on doneness.
  6. Rest before slicing
    Let the roast rest 10–15 minutes before cutting. This keeps it juicy.

Slow Cooker Version

  1. Season the pork the same way.
  2. Place onions and vegetables in the slow cooker.
  3. Put pork on top and add 1 cup broth.
  4. Cook:
