Pork roast

Here’s a simple and delicious pork roast recipe that comes out juicy and flavorful.


🍖 Garlic Herb Pork Roast

Ingredients

  • 3–4 lb pork shoulder or pork loin roast
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 onion, sliced
  • 1 cup chicken broth
  • 3–4 potatoes, chopped (optional)
  • 3 carrots, chopped (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Season the pork: Rub the roast with olive oil. Mix garlic, salt, pepper, paprika, thyme, and rosemary, then rub all over the pork.
  3. Prepare the pan: Place sliced onions in the bottom of a roasting pan. Put the pork roast on top.
  4. Add broth and vegetables: Pour chicken broth around the roast and add potatoes and carrots if using.
  5. Roast: Cook uncovered for 1½–2 hours, or until the internal temperature reaches 145°F (63°C) for pork loin or 190°F (88°C) for pork shoulder (for tender shredding).
  6. Rest: Let the roast rest 10 minutes before slicing.
  7. Serve: Slice and serve with the roasted vegetables and pan juices.

💡 Tips

  • Pork shoulder is best if you want pulled pork style (very tender).
  • Pork loin is leaner and better for slicing.
  • Add apples or apple juice for a slightly sweet flavor.
