Pork roast

Here’s a simple, reliable pork roast you can adapt to most cuts. If you tell me the cut (loin, shoulder/butt, tenderloin) and cooking method you prefer, I can fine-tune it.


Easy Oven Pork Roast (works for loin or shoulder)

Ingredients

  • 2–4 lb pork roast
  • 2 tbsp olive oil
  • 2–3 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried rosemary or thyme (or both)
  • Optional: 1 onion + 2 carrots, chunked

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Pat pork dry. Rub with olive oil, then all seasonings and garlic.
  3. Roast in a pan (fat side up if there is one). Add vegetables around it if using.
  4. Cook time
    • Pork loin: ~20–25 min per lb
    • Pork shoulder/butt: ~30–35 min per lb (or cook low & slow at 300°F until very tender)
  5. Internal temp:
    • Loin: 145°F (63°C)
    • Shoulder (sliceable): 170–180°F (or 195°F+ for pull-apart)
  6. Rest 10–15 min, then slice.

Quick Tips

  • For extra flavor, deglaze the pan with a splash of broth or apple juice for a quick gravy.
  • If your roast is lean (loin), don’t overcook—resting keeps it juicy.
  • Shoulder shines with longer, slower cooking.
