Pork Chops with Scalloped Potatoes

Ingredients

Pork Chops

  • 4 bone-in or boneless pork chops (¾–1 inch thick)
  • 1 tbsp olive oil
  • Salt & black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder

Scalloped Potatoes

  • 4–5 medium potatoes, thinly sliced
  • 1 small onion, thinly sliced
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk (warm)
  • 1 cup shredded cheddar cheese (optional but recommended)
  • Salt & pepper, to taste

Instructions

1. Preheat

  • Preheat oven to 375°F (190°C).

2. Prepare the scalloped potatoes

  1. Melt butter in a saucepan over medium heat.
  2. Stir in flour and cook 1 minute.
  3. Slowly whisk in milk until smooth and thickened.
  4. Season with salt and pepper; stir in cheese if using.
  5. Layer half the potatoes and onions in a greased baking dish.
  6. Pour half the sauce over top. Repeat layers.

3. Season & sear pork chops

  1. Pat pork chops dry.
  2. Season with salt, pepper, paprika, and garlic powder.
  3. Heat olive oil in a skillet and sear chops 2–3 minutes per side until golden.

4. Bake

  1. Nestle pork chops on top of the potatoes.
  2. Cover tightly with foil.
  3. Bake 45 minutes, then uncover and bake another 15–20 minutes until potatoes are tender and pork reaches 145°F (63°C).

5. Rest & serve

  • Let rest 5 minutes before serving.

Tips & Variations

  • Extra creamy: Substitute half the milk with heavy cream
  • Herb flavor: Add thyme or rosemary
  • One-pan meal: Add green beans or carrots around the edges
  • Slow cooker: Layer potatoes, add seared pork, cook LOW 6–7 hours
