🍽 Poor Man’s Hamburger Casserole

Simple, filling, and budget-friendly comfort food.


🛒 Ingredients (Serves 4–6)

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cups uncooked egg noodles (or macaroni)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup milk
  • 1 can (14–15 oz) diced tomatoes, drained (optional)
  • 1½ cups shredded cheddar cheese
  • Salt & black pepper
  • Optional: 1 tsp garlic powder or Italian seasoning

🔥 Instructions

1️⃣ Preheat oven to 350°F (175°C).

2️⃣ Cook pasta
Boil noodles until just al dente. Drain and set aside.

3️⃣ Brown beef
In a skillet, cook ground beef and onion until beef is browned. Drain excess grease. Season with salt, pepper, and optional spices.

4️⃣ Mix filling
In a bowl, combine cooked beef, pasta, soup, milk, and tomatoes (if using). Stir well.

5️⃣ Assemble
Pour mixture into a greased 9×13 baking dish.
Top with shredded cheese.

6️⃣ Bake
Bake 20–25 minutes until bubbly and cheese is melted and golden.


🌿 Easy Variations

  • Add frozen peas or corn for extra stretch.
  • Stir in a spoonful of sour cream for creamier texture.
  • Swap cream of mushroom for cream of chicken or cheddar soup.
  • Use ground turkey instead of beef.
