Pepper Steak
Ingredients
- 1 lb flank steak or sirloin, thinly sliced against the grain
- 2 Tbsp soy sauce
- 1 Tbsp cornstarch

Vegetables
- 2 bell peppers (red & green), sliced
- 1 small onion, sliced
- 2 cloves garlic, minced

Sauce
- ½ cup beef broth
- 3 Tbsp soy sauce
- 1 Tbsp oyster sauce (optional but recommended)
- 1 tsp sugar
- 1 tsp cornstarch
- ½ tsp black pepper
Instructions
- Marinate beef
Toss beef with 2 Tbsp soy sauce and 1 Tbsp cornstarch. Set aside 15 minutes. - Mix sauce
Whisk all sauce ingredients together. - Stir-fry beef
Heat oil in a hot skillet or wok. Sear beef quickly (1–2 minutes) until just browned. Remove. - Cook vegetables
Add peppers and onion; stir-fry 2–3 minutes. Add garlic and ginger. - Combine
Return beef to pan. Pour in sauce and cook until thickened, 1–2 minutes. - Serve hot over rice or noodles.
Tips & Variations
- Extra tender: Add ½ tsp baking soda to beef for 10 minutes, then rinse
- Spicy: Add crushed red pepper or chili paste
- Low-sodium: Use low-sodium soy sauce
