Ingredients
- Pasta (penne, fettuccine, or spaghetti)
- Bacon (chopped)
- Mushrooms (button, cremini, or portobello—sliced)
- Garlic (2–3 cloves, minced)
- Olive oil or butter
- Black pepper
- Salt (go easy—bacon’s salty)
- Optional but excellent:
- Cream or milk
- Parmesan cheese
- Onion or shallot
- Fresh parsley or thyme
How to Make It
- Cook the pasta
Boil in salted water until al dente. Save ½ cup of pasta water. - Cook the bacon
Fry in a pan over medium heat until crispy. Remove and set aside, leave the fat in the pan. - Sauté mushrooms
Add mushrooms to the bacon fat. Let them cook until golden and slightly crispy (don’t crowd them). - Add garlic
Toss in garlic (and onion/shallot if using) and cook 30 seconds until fragrant. - Bring it together
- Add pasta to the pan
- Toss in bacon
- Splash in pasta water or cream to loosen everything
- Finish with black pepper and Parmesan
- Serve
