Ingredients (serves 4–6)

  • 400 g pancit canton noodles (fresh or dried wheat noodles)
  • 200 g chicken or pork, sliced thinly
  • 150 g shrimp, peeled and deveined (optional)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup cabbage, shredded
  • 1 medium carrot, julienned
  • 1/2 cup green beans or snow peas, sliced
  • 2–3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp fish sauce (patis), optional
  • 1 1/2 cups chicken broth or water
  • 2 tbsp cooking oil
  • Salt and pepper, to taste
  • Calamansi or lemon wedges, for serving

Instructions

1. Prepare ingredients

  • Slice meats and vegetables.
  • If noodles are dried, soak in water for 10–15 minutes until pliable, then drain.

2. Cook protein

  • Heat oil in a large pan or wok over medium-high heat.
  • Sauté garlic and onion until fragrant.
  • Add chicken/pork and cook until lightly browned.
  • If using shrimp, add last and cook until pink. Remove protein and set aside.

3. Cook vegetables

  • In the same pan, sauté carrots and green beans for 2–3 minutes.
  • Add cabbage and cook until just tender.

4. Combine noodles and sauce

  • Add drained noodles to the pan.
  • Pour in chicken broth, soy sauce, oyster sauce, and fish sauce.
  • Stir and toss to coat the noodles evenly.
  • Cook for 5–7 minutes until noodles absorb the sauce and are cooked through.

5. Finish

  • Add cooked protein back into the pan.
  • Toss everything together and adjust seasoning with salt and pepper.

6. Serve

  • Plate hot and serve with calamansi or lemon wedges.

  • Use fresh pancit canton noodles for best texture.
  • Stir constantly to prevent sticking.
  • You can add other vegetables like bell peppers or mushrooms.
  • For a richer flavor, sauté the noodles with a little sesame oil at the end.
