🍺 Oven-Braised Beer Brats with Caramelized Onions & Apples

Ingredients (Serves 4–6)

  • 6 fresh bratwursts
  • 2 large yellow onions, thinly sliced
  • 2 apples (Granny Smith or Honeycrisp), thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 bottle (12 oz) lager or pilsner beer
  • 1 tbsp Dijon mustard
  • 1 tsp brown sugar (optional)
  • 1/2 tsp caraway seeds (optional)
  • Salt and black pepper, to taste
  • Fresh thyme (optional)

Instructions

1️⃣ Preheat

Preheat oven to 375°F (190°C).

2️⃣ Caramelize the onions & apples

  • In a large oven-safe skillet or Dutch oven, heat butter and olive oil over medium heat.
  • Add onions with a pinch of salt. Cook 10–15 minutes, stirring occasionally, until soft and golden.
  • Add apples and cook another 5 minutes until slightly softened.
  • Stir in garlic, brown sugar (if using), and caraway seeds.

3️⃣ Add brats & beer

  • Nestle the bratwursts into the onion-apple mixture.
  • Pour beer around (not directly over) the brats until it comes about halfway up them.
  • Stir Dijon mustard into the liquid.

4️⃣ Oven braise

  • Transfer skillet uncovered to oven.
  • Bake 25–35 minutes, turning brats once, until cooked through (internal temp 160°F / 71°C).

5️⃣ Optional browning step

For extra color, broil 2–3 minutes at the end.


Serve With

  • Toasted brat buns
  • Creamy mashed potatoes
  • Warm pretzels
  • Sharp mustard or whole-grain mustard

Flavor Tips

  • Use a malty lager for richer flavor.
  • Add a splash of apple cider vinegar if you like extra tang.
  • A handful of shredded cabbage added during braising makes it even heartier.
