One-Pan Bold Honey BBQ Chicken Rice

Ingredients

  • 4 boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 1¼ cups chicken broth
  • ½ cup honey BBQ sauce (store-bought or homemade)
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • ½ tsp smoked paprika (optional for extra bold flavor)
  • Salt and pepper, to taste
  • Optional garnish: chopped parsley or green onions

Instructions

1️⃣ Sear the Chicken

  • Heat olive oil in a large skillet or ovenproof pan over medium-high heat.
  • Season chicken with salt, pepper, and smoked paprika.
  • Sear chicken 2–3 minutes per side until lightly golden. Remove and set aside.

2️⃣ Sauté Aromatics

  • In the same pan, sauté onion, bell pepper, and garlic 2–3 minutes until softened.

3️⃣ Add Rice & Liquid

  • Stir in rice and coat with oil and aromatics.
  • Add chicken broth and ¼ cup of BBQ sauce. Stir to combine.

4️⃣ Return Chicken & Simmer

  • Place chicken on top of the rice.
  • Cover and simmer over low heat 20–25 minutes, until rice is tender and chicken reaches 75°C (165°F).

5️⃣ Add Honey BBQ Flavor

  • Drizzle remaining ¼ cup honey BBQ sauce over the chicken.
  • Let sit 2–3 minutes before serving so flavors meld.

6️⃣ Serve

  • Garnish with chopped parsley or green onions.
  • Serve hot with a side of steamed vegetables or a simple salad.

Tips & Variations

  • For extra bold flavor, use a smoky or spicy BBQ sauce.
  • Swap long-grain rice for brown rice — cook an extra 10 minutes and add a bit more broth.
  • Add corn or black beans to the rice for a heartier one-pan meal.
