No-Bake Chocolate Éclair Cake 🍫🍰
A super easy dessert that tastes like classic éclairs but requires no oven. It’s creamy, chocolatey, and perfect for making ahead.

🧾 Ingredients

  • 2 boxes instant vanilla pudding mix (3.4 oz / ~96 g each)
  • 3 cups cold milk
  • 1 container whipped topping (8 oz / ~225 g, thawed)
  • 1 box graham crackers
  • 1 container chocolate frosting (about 16 oz / ~450 g)

👩‍🍳 Instructions

  1. Make the pudding mixture
    • In a bowl, whisk together the pudding mix and cold milk for about 2 minutes until thick.
    • Fold in the whipped topping until smooth.
  2. Layer the cake
    • In a 9×13 inch dish, place a layer of graham crackers on the bottom.
    • Spread half of the pudding mixture over the crackers.
    • Add another layer of graham crackers.
    • Spread the remaining pudding mixture.
    • Finish with a final layer of graham crackers.
  3. Add the chocolate topping
    • Microwave the chocolate frosting for about 15–20 seconds so it becomes spreadable.
    • Spread it evenly over the top layer of crackers.
  4. Chill
    • Cover and refrigerate for at least 6 hours, but overnight is best.
    • The crackers soften and turn cake-like.

🍽️ Serve

Cut into squares and enjoy a creamy, chocolate-covered dessert that tastes just like an éclair.

  • Use chocolate graham crackers for extra chocolate flavor.
