Mee Maw chocolate cake

Here’s a classic “Mee Maw” Chocolate Cake — rich, moist, and perfectly nostalgic, just like a beloved grandmother would make 🍫🎂


Mee Maw Chocolate Cake

Serves: 8–12
Time: ~1 hour (including baking and cooling)

Ingredients

For the Cake:

  • 1¾ cups (220 g) all-purpose flour
  • 1½ cups (300 g) granulated sugar
  • ¾ cup (65 g) unsweetened cocoa powder
  • 1½ tsp baking powder
  • 1½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup (240 ml) whole milk
  • ½ cup (120 ml) vegetable oil
  • 2 tsp vanilla extract
  • 1 cup (240 ml) boiling water

For the Frosting:

  • ½ cup (115 g) unsalted butter, softened
  • ⅔ cup (65 g) unsweetened cocoa powder
  • 3 cups (360 g) powdered sugar
  • 1/3 cup (80 ml) milk (adjust for consistency)
  • 1 tsp vanilla extract

Instructions

  1. Prepare the cake
    • Preheat oven to 175°C / 350°F. Grease and flour two 9-inch round cake pans.
    • In a large bowl, whisk together flour, sugar, cocoa, baking powder, baking soda, and salt.
    • Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes.
    • Carefully stir in boiling water (batter will be thin).
  2. Bake
    • Pour batter evenly into prepared pans.
    • Bake 30–35 minutes or until a toothpick inserted comes out clean.
    • Cool in pans 10 minutes, then transfer to wire racks to cool completely.
  3. Make the frosting
    • Beat butter and cocoa together until smooth.
    • Add powdered sugar and milk gradually until desired consistency.
    • Beat in vanilla.
  4. Assemble the cake
    • Place one cake layer on a serving plate. Spread frosting evenly on top.
    • Add second layer and frost the top and sides.
  5. Serve
    • Optional: decorate with chocolate shavings, sprinkles, or fresh berries.

Tips & Variations

  • Extra moist: Add ½ cup sour cream to the batter.
  • Flavor boost: Add 1 tsp espresso powder to enhance chocolate flavor.
  • Make ahead: Cake can be baked a day before and stored in an airtight container.
  • Mini cupcakes: Bake in cupcake liners for individual servings (12–15 cupcakes).
