Meatloaf with potatoes

Meatloaf with Potatoes 🍖🥔 is a classic comfort-food dinner where juicy meatloaf bakes together with tender potatoes.


Ingredients

For the Meatloaf

  • 1½ lbs ground beef
  • 1 cup breadcrumbs
  • 1 egg
  • ½ cup milk
  • ½ onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper

For the Topping

  • ⅓ cup ketchup
  • 2 tbsp brown sugar
  • 1 tsp mustard (optional)

For the Potatoes

  • 4–5 potatoes, peeled and cut into chunks
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika

Instructions

1. Preheat oven

Preheat oven to 375°F (190°C).

2. Mix the meatloaf

In a large bowl combine:

  • Ground beef
  • Breadcrumbs
  • Egg
  • Milk
  • Onion
  • Garlic
  • Ketchup
  • Worcestershire sauce
  • Salt and pepper

Mix until just combined.

3. Shape the loaf

Form the mixture into a loaf shape and place it in the center of a baking dish.

4. Prepare the potatoes

In a bowl toss potatoes with:

  • Olive oil
  • Salt
  • Pepper
  • Paprika

Arrange them around the meatloaf.

5. Add topping

Mix ketchup, brown sugar, and mustard and spread over the meatloaf.

6. Bake

Bake for 50–60 minutes until meatloaf is cooked through and potatoes are tender.

7. Rest and serve

Let the meatloaf rest 10 minutes, then slice and serve with the roasted potatoes.

  • Add carrots or green beans to the pan 🥕
