Ohhh comfort food royalty right there 😌 Meatloaf Casserole—all the cozy meatloaf vibes with creamy mashed potatoes on top. Here’s a classic, family-favorite version:


Meatloaf Casserole

Ingredients (Serves 6–8)

Meatloaf layer:

  • 1½ lbs ground beef (or beef/pork mix)
  • 1 cup breadcrumbs or crushed crackers
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 2 eggs
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • Salt & pepper, to taste

Topping:

  • 3 cups mashed potatoes (homemade or prepared)
  • 1½ cups shredded cheddar cheese

Optional glaze:

  • 1/4 cup ketchup
  • 2 tablespoons brown sugar

Instructions

  1. Preheat oven
    • Preheat to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Make the meatloaf layer
    • In a large bowl, mix ground meat, breadcrumbs, milk, onion, eggs, ketchup, Worcestershire, garlic powder, salt, and pepper until just combined.
  3. Bake meat layer
    • Press meat mixture evenly into the baking dish.
    • Bake for 25 minutes.
  4. Add glaze & topping
    • Mix ketchup and brown sugar (if using) and spread over meat.
    • Spoon mashed potatoes evenly on top.
    • Sprinkle with cheese.
  5. Finish baking
    • Return to oven and bake another 20–25 minutes, until bubbly and golden.
  6. Rest & serve
    • Let sit 5–10 minutes before serving.

🔥 Tips & Variations

  • Add peas or corn between the meat and potatoes for a one-dish meal.
  • Swap cheddar for Colby-Jack or mozzarella.
  • Use ground turkey for a lighter version.

This reheats beautifully and is amazing with green beans or a simple salad.
