  3. Toss potatoes with olive oil and seasonings. Arrange around the meatloaf in the same dish or on a separate tray.
  4. Bake for 50–60 minutes, until meatloaf is cooked through (internal temp ~160°F / 71°C) and potatoes are golden and tender.
