Here’s a classic, juicy Meatloaf—tender inside, caramelized on top, and pure comfort food 🍞🥩

Classic Meatloaf

Ingredients (serves 4–6)

Meatloaf

  • 750 g (1½ lb) ground beef (or beef + pork mix)
  • 1 cup breadcrumbs or crushed crackers
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 eggs
  • ½ cup milk
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper

Glaze

  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce

Instructions

  1. Prep
    • Preheat oven to 175°C / 350°F.
    • Line a loaf pan or baking tray with foil/parchment.
  2. Mix gently
    • In a large bowl, combine all meatloaf ingredients.
    • Mix just until combined—don’t overwork.
  3. Shape
    • Press mixture into loaf pan or free-form a loaf on tray.
  4. Glaze
    • Mix glaze ingredients and spread over the top.
  5. Bake
    • Bake 55–65 minutes, until internal temp is 71°C / 160°F.
  6. Rest & serve
    • Let rest 10 minutes before slicing.

Tips for the Best Meatloaf

  • Breadcrumbs + milk = moist loaf
  • Gentle mixing keeps it tender
  • Resting prevents crumbling

Variations

  • Cheesy: Add grated cheddar or mozzarella
  • Italian-style: Use Parmesan, herbs, marinara glaze
  • Turkey meatloaf: Swap beef for turkey
  • No breadcrumbs: Use oats

Perfect with mashed potatoes and green beans.
If you want, I can give you a slow cooker, air fryer, or gluten-free version.
