🍲 Meatball Tortellini Soup

Ingredients

  • 1 lb (450 g) frozen or homemade meatballs
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • 1 can (14.5 oz) diced tomatoes
  • 4–5 cups chicken or beef broth
  • 1 package (9–12 oz) cheese tortellini (fresh or frozen)
  • 2 cups fresh spinach or kale
  • Salt & pepper, to taste
  • Optional topping: grated Parmesan, fresh basil or parsley

Instructions

1️⃣ Start the soup base

  • Heat olive oil in a large pot over medium heat.
  • Sauté onion until soft (3–4 minutes).
  • Add garlic, Italian seasoning, and red pepper flakes; cook 30 seconds.

2️⃣ Simmer

  • Add diced tomatoes and broth.
  • Bring to a gentle boil.

3️⃣ Add meatballs

  • Stir in meatballs.
  • Simmer 10–15 minutes until meatballs are heated through and tender.

4️⃣ Cook the tortellini

  • Add tortellini and cook according to package directions (usually 3–5 minutes).

5️⃣ Finish

  • Stir in spinach until wilted.
  • Season with salt & pepper.

6️⃣ Serve

  • Top with Parmesan and herbs. Serve hot.

🔥 Tips & Variations

  • Creamy version: add ½–1 cup heavy cream at the end
  • Tomato-rich: stir in 1–2 tbsp tomato paste
  • Slow cooker: cook everything except tortellini & spinach on LOW 6 hrs, add those in last 30 min
  • Homemade meatballs: Italian-style or turkey both work great
