🍿 Marshmallow Caramel Corn

A sweet, crunchy, and chewy snack—perfect for movie nights, parties, or holiday treats. 🍬


🧾 Ingredients

  • 10 cups popped popcorn (about 1/2 cup kernels)
  • 1 cup (2 sticks) unsalted butter
  • 1 cup brown sugar, packed
  • ½ cup light corn syrup
  • ½ tsp salt
  • 1 tsp vanilla extract
  • 3 cups mini marshmallows

Optional add-ins:

  • ½ cup chopped nuts (pecans, almonds, or peanuts)
  • ½ tsp cinnamon or pumpkin spice

👩‍🍳 Instructions

1️⃣ Preheat oven

Preheat oven to 120°C / 250°F. Line a large baking sheet with parchment paper.

2️⃣ Make caramel

  1. In a medium saucepan, melt butter over medium heat.
  2. Stir in brown sugar, corn syrup, and salt.
  3. Bring to a boil, stirring constantly. Boil 4–5 minutes until thickened.
  4. Remove from heat and stir in vanilla extract.

3️⃣ Coat popcorn

  1. Place popped popcorn in a large bowl.
  2. Pour caramel over popcorn and stir to coat evenly.

4️⃣ Bake

  1. Spread coated popcorn on the prepared baking sheet.
  2. Bake 30 minutes, stirring every 10 minutes for even coating.

5️⃣ Add marshmallows

  1. Remove from oven and immediately sprinkle mini marshmallows over the hot popcorn.
  2. Gently stir until marshmallows stick and slightly melt into the caramel.

6️⃣ Cool

Let the popcorn cool completely before breaking into clusters.
