Ooo, that one’s a summer classic—cool, tangy, and ridiculously good. Here’s a simple marinated cucumber, tomato & onion salad that gets better the longer it sits.


🥒🍅 Marinated Cucumber, Tomato & Onion Salad

🥗 Ingredients

  • 2–3 cucumbers, sliced (English or peeled regular)
  • 2 cups tomatoes, chopped or wedged
  • ½ red onion, thinly sliced
  • ¼ cup vinegar (apple cider or red wine)
  • 2 tbsp olive oil
  • 1–2 tbsp sugar or honey (to taste)
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: fresh dill, parsley, or oregano

🥄 Instructions

  1. In a large bowl, whisk together vinegar, olive oil, sugar, salt, and pepper.
  2. Add cucumbers, tomatoes, and onion.
  3. Toss well to coat everything.
  4. Cover and refrigerate at least 30 minutes (1–2 hours is even better).
  5. Stir before serving; adjust seasoning if needed.

🌿 Variations & Tips

  • Creamy version: Add 2–3 tbsp sour cream or Greek yogurt.
  • Extra tangy: Add a splash of lemon juice.
  • Southern-style: Use white vinegar + a little extra sugar.
  • No onion bite: Soak onion slices in cold water 10 minutes first.
  • Mediterranean vibe: Add feta and olives.
