🥓🧀 Low-Carb Bacon Cheeseburger Casserole

Ingredients (4–6 servings)

  • 1½ lbs ground beef (80/20 works great)
  • 6–8 slices bacon, cooked & crumbled
  • 1 small onion, diced (optional but flavorful)
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella (or more cheddar)
  • 3 eggs
  • ½ cup heavy cream
  • 2 tbsp mustard
  • ¼ cup sugar-free ketchup
  • Salt & black pepper
  • Optional toppings: pickles, green onions, sesame seeds

Instructions

  1. Cook the beef
    Preheat oven to 375°F (190°C).
    Brown ground beef with onion, garlic, salt, and pepper. Drain excess fat.
  2. Assemble base
    Spread beef in a greased baking dish. Sprinkle bacon evenly over top.
  3. Cheese layer
    Add shredded cheddar and mozzarella.
  4. Egg mixture
    Whisk eggs, heavy cream, mustard, and sugar-free ketchup. Pour evenly over casserole.
  5. Bake
    Bake uncovered 30–35 minutes, until set and lightly golden.
  6. Rest & serve
    Let rest 5–10 minutes before slicing. Add pickles or green onions on top for full cheeseburger energy.

Pro Tips

  • Want it extra juicy? Add ¼ cup sour cream to the egg mixture
  • Swap cheddar for pepper jack if you like heat
  • Serve with a simple salad or steamed veggies
