🥔 Loaded Crock Potatoes

🔹 Ingredients (serves 4–6)

  • 6–8 medium potatoes (russet or red), scrubbed and cut into cubes
  • 1 cup shredded cheddar cheese
  • ½ cup cooked bacon, crumbled
  • ½ cup sour cream
  • ¼ cup milk (optional, for creamier texture)
  • 2–3 green onions, chopped
  • 1 tsp garlic powder
  • Salt & pepper to taste

🔹 Instructions

1. Prep the crock pot

  • Spray crock pot with non-stick cooking spray

2. Add potatoes & seasonings

  • Place cubed potatoes in the crock pot
  • Sprinkle with garlic powder, salt, and pepper
  • Stir to coat evenly

3. Cook

  • Cover and cook on Low for 4–5 hours or High for 2–3 hours
  • Potatoes should be tender when pierced with a fork

4. Add toppings

  • Stir in half the cheddar cheese and sour cream
  • Sprinkle crumbled bacon and remaining cheddar on top
  • Cover and cook another 10–15 minutes until cheese melts

5. Serve

  • Garnish with green onions
  • Serve as a side or hearty main

  • For extra creaminess, add a splash of milk when stirring in sour cream
