Lemon ginger chicken

Here’s a flavorful Lemon Ginger Chicken recipe that’s bright, zesty, and perfect for a quick weeknight dinner or meal prep.


Ingredients (serves 3–4)

  • 1 lb (450 g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1–2 tbsp fresh ginger, grated
  • Juice and zest of 1 lemon
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp honey or maple syrup (optional, for a touch of sweetness)
  • 1/4 tsp black pepper
  • 1/4 tsp red chili flakes (optional, for heat)
  • Fresh herbs for garnish (cilantro, parsley, or green onions)

Instructions

  1. Marinate the chicken
    • In a bowl, combine chicken, garlic, ginger, lemon juice and zest, soy sauce, honey, black pepper, and chili flakes.
    • Let marinate for at least 15–20 minutes (or up to 2 hours for more flavor).
  2. Cook the chicken
    • Heat olive oil in a large skillet over medium-high heat.
    • Add chicken and cook 5–7 minutes, stirring occasionally, until browned and cooked through.
  3. Make it saucy
    • Pour any remaining marinade into the pan and simmer 2–3 minutes to thicken slightly.
  4. Serve
    • Garnish with fresh herbs and serve with rice, quinoa, or steamed vegetables.

✅ Tips:

  • For extra brightness, add a little more lemon juice just before serving.
  • You can roast this in the oven at 200°C (400°F) for 20–25 minutes instead of stovetop cooking.
  • Add sliced vegetables (bell peppers, broccoli, or snap peas) to the skillet for a one-pan meal.
