Lemon Garlic Butter Chicken 🍋🧈

Ingredients (Serves 4)

  • 4 chicken breasts (boneless, skinless)
  • Salt & pepper, to taste
  • 2 tbsp olive oil
  • 3 tbsp butter, divided
  • 4 cloves garlic, minced
  • Juice of 1 lemon
  • ½ cup chicken broth
  • 1 tsp Italian seasoning or fresh thyme
  • Optional: fresh parsley, chopped, for garnish

Instructions

  1. Prep chicken:
    • Season chicken generously with salt and pepper.
  2. Sear chicken:
    • Heat olive oil in a large skillet over medium-high heat.
    • Add chicken, cook 5–6 min per side until golden and cooked through (internal temp 165°F / 74°C). Remove from pan and set aside.
  3. Make the sauce:
    • In the same pan, melt 2 tbsp butter.
    • Add garlic and sauté 30–60 seconds until fragrant (don’t burn!).
    • Stir in chicken broth, lemon juice, and Italian seasoning. Simmer 2–3 minutes to reduce slightly.
  4. Finish:
    • Stir in remaining 1 tbsp butter for richness.
    • Return chicken to pan, spoon sauce over top, and simmer 2 more minutes to coat.
  5. Serve:
    • Garnish with fresh parsley.
    • Great with rice, mashed potatoes, or roasted veggies.

Tips

  • Extra zing: Add lemon zest along with juice.
  • Creamy version: Stir in 2–3 tbsp heavy cream at the end.
  • Shortcut: Use pre-minced garlic and chicken broth cubes if you’re in a rush.
