🍋 Lemon Curd Bars (Simple Recipe)

🧈 Ingredients

For the crust:

  • 1 cup (225g) butter, softened
  • ½ cup sugar
  • 2 cups all-purpose flour
  • Pinch of salt

For the lemon curd filling:

  • 1½ cups sugar
  • 4 large eggs
  • ½ cup fresh lemon juice (about 3–4 lemons)
  • Zest of 2 lemons
  • ¼ cup flour (helps set the filling)

1. Make the crust

  • Preheat oven to 180°C (350°F)
  • Cream butter + sugar until smooth
  • Mix in flour + salt to form a soft dough
  • Press into a greased baking pan
  • Bake for 15–20 minutes until lightly golden

2. Prepare the filling

  • Whisk sugar + eggs until smooth
  • Add lemon juice, zest, and flour
  • Mix well (it’ll be runny—that’s normal)

3. Bake

  • Pour filling over the warm crust
  • Bake another 20–25 minutes until set

4. Cool & serve

  • Let it cool completely
  • Chill for cleaner cuts
  • Dust with powdered sugar before serving

  • Use fresh lemons—it makes a huge difference
  • Don’t overbake; the center should have a slight jiggle
  • Chill before slicing for neat squares
  • For extra richness, replace part of the juice with butter for a true “curd” texture
