Juicy Steak with Creamy Garlic Sauce (Serves 2)

Ingredients

For the steak

  • 2 ribeye, sirloin, or filet mignon steaks (200–250 g / 7–9 oz each)
  • Salt & freshly ground black pepper
  • 1–2 tbsp oil (vegetable or olive)
  • 1 tbsp butter
  • 1 clove garlic, crushed
  • Optional: fresh thyme or rosemary sprig

For the creamy garlic sauce

  • 2 tbsp butter
  • 3 cloves garlic, minced
  • ½ cup (120 ml) heavy cream
  • ½ cup (50 g) grated Parmesan (optional for extra richness)
  • 1 tsp Dijon mustard (optional)
  • Salt & pepper, to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Prepare the steak
    • Bring steaks to room temperature (20–30 min).
    • Pat dry and season generously with salt & pepper.
  2. Sear the steak
    • Heat oil in a skillet over medium-high heat until shimmering.
    • Add steaks and sear 3–4 min per side for medium-rare (adjust for thickness).
    • Add butter, crushed garlic, and herbs, spooning butter over steak (basting) for extra flavor.
    • Remove steak and let rest 5–10 minutes.
  3. Make the creamy garlic sauce
    • In the same pan, melt 2 tbsp butter over medium heat.
    • Add minced garlic, sauté 30–60 seconds until fragrant.
    • Stir in heavy cream and Dijon mustard (if using).
    • Reduce slightly, then stir in Parmesan if desired.
    • Season with salt & pepper to taste.
  4. Serve
    • Slice steak against the grain and pour sauce over.
    • Garnish with parsley. Serve with mashed potatoes, roasted vegetables, or buttered noodles.

Tips

  • Don’t overcrowd the pan—gives a better sear
  • Rest steak to retain juices
  • Adjust cream consistency: simmer longer for thicker sauce

Variations

  • Herby sauce: Add thyme, rosemary, or chives
  • Spicy: Add a pinch of chili flakes or smoked paprika
