Italian Drunken Noodles

Here’s a fun fusion recipe: Italian Drunken Noodles — combining the bold flavors of Thai drunken noodles with Italian ingredients like pasta and herbs. 🍝🌶️🇮🇹


Ingredients (serves 2–3)

  • 250 g Spaghetti or linguine
  • 2 tbsp Olive Oil
  • 2 cloves Garlic, minced
  • 1 small Onion, thinly sliced
  • 150–200 g Chicken Breast or shrimp, sliced
  • 1 small Red Bell Pepper, sliced
  • 1–2 Red Chilies, sliced (adjust to heat preference)
  • 2 tbsp Soy Sauce
  • 1 tbsp Oyster Sauce
  • 1 tbsp Tomato Paste or marinara for an Italian twist
  • 1–2 tsp Balsamic Vinegar (optional)
  • ½ cup Fresh Basil, roughly chopped
  • Salt & Black Pepper to taste
  • Grated Parmesan Cheese for garnish

Instructions

  1. Cook the pasta
    • Boil pasta in salted water until al dente. Drain and set aside.
  2. Cook protein and vegetables
    • Heat olive oil in a large skillet or wok over medium-high heat.
    • Sauté garlic and onion until fragrant. Add chicken or shrimp and cook through.
    • Toss in red bell pepper and chilies, stir-frying 2–3 minutes.
  3. Make the sauce
    • Stir in soy sauce, oyster sauce, tomato paste, and balsamic vinegar. Mix well.
    • Add cooked pasta to the skillet and toss to coat evenly with sauce.
  4. Finish
    • Turn off heat, fold in fresh basil, and season with salt and pepper.
    • Serve hot, sprinkled with grated Parmesan cheese.

Tips

  • For a spicier kick, increase the number of chilies or add chili flakes.
  • Use shrimp, chicken, or tofu depending on preference.
  • Adding a splash of white wine while cooking the sauce gives it a true “drunken” flavor.
