Here’s a flavorful twist on classic Thai-style noodles — Italian Drunken Noodles 🍝🌶️ — combining the bold spice of drunken noodles with Italian ingredients.


Ingredients (serves 2–3)

  • 200 g wide rice noodles or fettuccine
  • 200 g chicken, shrimp, or Italian sausage, sliced
  • 1 small onion, sliced
  • 1 bell pepper, sliced
  • 2–3 cloves garlic, minced
  • 1–2 red chili peppers, sliced (adjust to taste)
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 2 tbsp white wine or dry vermouth (the “drunken” element)
  • 1 tsp chili flakes (optional for heat)
  • 1–2 tbsp olive oil
  • Fresh basil leaves or parsley for garnish
  • Grated Parmesan (optional, Italian twist)

Instructions

1. Cook noodles

  • Boil noodles according to package instructions until al dente. Drain and set aside.

2. Cook protein

  • Heat olive oil in a large skillet or wok over medium-high heat.
  • Cook chicken, shrimp, or sausage until browned and cooked through. Remove from pan.

3. Sauté vegetables

  • In the same pan, add onion, bell pepper, garlic, and chili peppers.
  • Sauté 3–5 minutes until vegetables are slightly softened.

4. Combine and season

  1. Return cooked protein to the pan.
  2. Add cooked noodles.
  3. Pour in soy sauce, oyster sauce, and white wine. Toss everything together over medium heat for 2–3 minutes.
  4. Sprinkle chili flakes if desired.

5. Serve

  • Garnish with fresh basil or parsley.
  • Optional: sprinkle grated Parmesan for a unique Italian twist.
  • Serve hot as a main dish.

  • Adjust spice by adding more or fewer chili peppers.
  • Use rice noodles for a Thai feel or fettuccine/pappardelle for a more Italian vibe.
  • The white wine adds depth — substitute chicken broth if you prefer non-alcoholic.
