🍝 Creamy Italian Chicken Pasta

Ingredients (serves 4–6)

  • 12 oz pasta (penne, rotini, or fettuccine)
  • 2 tbsp olive oil
  • 2 boneless skinless chicken breasts, sliced
  • Salt & black pepper
  • 1 tsp Italian seasoning
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • Optional: 1 cup spinach or sun-dried tomatoes

Instructions

  1. Cook pasta
    • Cook pasta in salted water until al dente. Reserve ½ cup pasta water. Drain.
  2. Cook the chicken
    • Heat olive oil in a large skillet over medium-high heat.
    • Season chicken with salt, pepper, and Italian seasoning.
    • Cook 4–5 minutes per side until golden and cooked through. Remove and set aside.
  3. Make the sauce
    • In the same skillet, add garlic and cook 30 seconds.
    • Add cherry tomatoes and cook 2–3 minutes.
    • Pour in chicken broth and cream. Simmer 5 minutes.
    • Stir in Parmesan until smooth.
  4. Combine
    • Add cooked pasta and chicken back to skillet.
    • Toss to coat. Add pasta water if needed to loosen sauce.
    • Stir in spinach if using (it’ll wilt fast).
  5. Serve
    • Garnish with extra Parmesan and fresh basil or parsley.
