Ingredients (about 8 pancakes)

  • 1 1/2 cups all-purpose flour
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 1/4 cups milk
  • 1 large egg
  • 3 tbsp melted butter (plus extra for cooking)
  • 1 tsp vanilla extract (optional)

Instructions

  1. Mix Dry Ingredients:
    In a large bowl, whisk together flour, baking powder, salt, and sugar.
  2. Mix Wet Ingredients:
    In another bowl, beat the milk, egg, melted butter, and vanilla extract until combined.
  3. Combine:
    Pour wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix—a few lumps are okay.
  4. Cook Pancakes:
    Heat a non-stick skillet or griddle over medium heat and lightly grease with butter. Pour 1/4 cup batter per pancake. Cook until bubbles form on the surface, then flip and cook another 1–2 minutes until golden brown.
  5. Serve:
    Stack pancakes and serve warm with syrup, fresh fruit, or a dollop of yogurt.
