Ingredients (Serves 4)

  • 2 lbs chicken wings, split into flats and drumettes
  • 1 tbsp baking powder (aluminum-free)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp paprika (smoked paprika optional)

Hot Sauce Coating

  • ¼ cup hot sauce (like Frank’s RedHot)
  • 2 tbsp unsalted butter, melted
  • 1 tsp honey (optional, for balance)
  • ½ tsp garlic powder

Instructions

  1. Preheat oven
    Set oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top.
  2. Prep wings
    Pat wings very dry with paper towels. This ensures crispiness.
  3. Coat wings
    In a large bowl, mix baking powder, salt, pepper, garlic powder, and paprika. Toss wings in the mixture until evenly coated.
  4. Bake
    Arrange wings on the wire rack in a single layer. Bake 20 minutes, flip, then bake another 20–25 minutes until skin is golden and crispy.
  5. Make hot sauce
    While wings bake, combine hot sauce, melted butter, honey, and garlic powder in a small bowl.
  6. Toss & serve
    Transfer wings to a large bowl, pour sauce over, and toss to coat evenly. Serve hot with celery sticks and ranch or blue cheese dressing.

Tips for Extra Crispy Wings

  • Pat wings extremely dry before baking.
  • Use a wire rack so hot air circulates around the wings.
  • Broil 1–2 minutes at the end for extra crispiness, watching closely.

Variations

  • Sweet Heat: Add 1–2 tbsp brown sugar or maple syrup to the sauce.
  • Garlic Parmesan: Toss baked wings with melted butter, garlic powder, and grated Parmesan instead of hot sauce.
  • Buffalo-style: Use a mix of hot sauce and melted butter for classic Buffalo wings.
