🥘 Ground Beef and Potatoes Skillet

🔹 Ingredients (serves 4)

  • 1 lb ground beef
  • 4–5 medium potatoes, diced small (russet or Yukon gold work best)
  • 1 medium onion, diced
  • 2–3 cloves garlic, minced
  • 1 tsp paprika
  • ½ tsp dried thyme or rosemary (optional)
  • Salt & pepper to taste
  • 2 tbsp vegetable oil or butter
  • Optional: 1 cup shredded cheese, ½ cup peas or bell peppers

🔹 Instructions

1. Cook potatoes

  • Heat oil in a large skillet over medium heat
  • Add diced potatoes, season with salt and pepper
  • Cook 8–10 minutes, stirring occasionally, until lightly browned and slightly tender
  • Remove from skillet and set aside

2. Cook ground beef

  • In the same skillet, add onions and garlic, sauté 2–3 minutes
  • Add ground beef, breaking it apart
  • Cook until browned and fully cooked
  • Drain excess fat if needed

3. Combine

  • Add potatoes back to skillet
  • Sprinkle in paprika, herbs, and additional salt/pepper
  • Stir gently and cook 5–7 minutes until potatoes are fully tender
  • Optional: sprinkle shredded cheese on top, cover, and melt

4. Serve

  • Serve hot as a main dish or side
  • Garnish with fresh parsley or green onions

  • Cut potatoes small for faster cooking
  • Add frozen vegetables like peas or corn for extra color and nutrition
  • For a slow-cooker version, layer raw potatoes and beef with seasonings, cook Low 6–7 hours
