Ground Beef and Potato Hash (Serves 3–4)

Ingredients:

  • 1 lb (450 g) ground beef
  • 2–3 medium potatoes, diced small
  • 1 small onion, diced
  • 1 bell pepper, diced (optional)
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika (or regular paprika)
  • 1/2 tsp chili powder or cayenne (optional, for heat)
  • Salt and pepper to taste
  • Optional: fresh parsley or green onions for garnish
  • Optional: fried eggs to serve on top

Instructions:

  1. Prep potatoes:
    • Parboil diced potatoes in salted water for 5 minutes to speed up cooking and make them tender. Drain well.
  2. Cook potatoes:
    • Heat 1 tbsp olive oil in a large skillet over medium-high heat.
    • Add potatoes and cook, stirring occasionally, until golden and slightly crispy (~10 min). Remove from skillet and set aside.
  3. Cook ground beef:
    • In the same skillet, add remaining oil.
    • Add onion, bell pepper, and garlic; sauté 3–4 minutes until softened.
    • Add ground beef, season with salt, pepper, paprika, and chili powder. Cook until browned and cooked through, breaking it apart as it cooks.
  4. Combine & crisp:
    • Add potatoes back to the skillet. Stir to combine and let everything cook together for 2–3 minutes for extra crispiness and flavor.
  5. Serve:
    • Garnish with parsley or green onions.
    • Optional: top with a fried egg for a complete breakfast-style hash.

Tips & Variations:

  • Cheesy twist: Sprinkle shredded cheese over the hash in the last 2 minutes of cooking.
  • Vegetable boost: Add mushrooms, zucchini, or spinach for extra nutrition.
