🫓 Grilled Mediterranean Veggie Quesadillas

🧾 Ingredients:

  • 4 large flour tortillas
  • 1 cup shredded mozzarella or feta (or a mix)
  • 1 zucchini (sliced)
  • 1 bell pepper (sliced)
  • 1 small onion (sliced)
  • 1 cup mushrooms (optional)
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp paprika
  • Salt & black pepper to taste
  • Optional: olives, sun-dried tomatoes, spinach

🔥 Instructions:

  1. Grill the veggies
    Heat olive oil in a pan. Add zucchini, bell pepper, onion, and mushrooms.
    Season with oregano, paprika, salt, and pepper. Cook until tender and slightly charred.
  2. Assemble the quesadillas
    Place a tortilla on a flat surface.
    Add a layer of cheese, then grilled veggies, then a bit more cheese on top.
    Cover with another tortilla (or fold one tortilla in half).
  3. Cook
    Heat a pan or grill. Cook the quesadilla on medium heat for 2–3 minutes per side until golden and crispy, and cheese melts.
  4. Serve
    Cut into wedges and serve warm.

  • Hummus
  • Tzatziki
