Grilled Cheese Patty Melt

Ingredients

  • 8 slices of rye or sourdough bread
  • 2 burger patties (about ¼–⅓ lb / 115–150 g each)
  • 4 slices of Swiss or cheddar cheese
  • 1 large onion, thinly sliced
  • 2 tbsp butter
  • Salt and pepper, to taste
  • Optional: Thousand Island or Russian dressing for serving

Instructions

1️⃣ Caramelize the Onions

  • Melt 1 tbsp butter in a skillet over medium-low heat.
  • Add onions and a pinch of salt.
  • Cook 10–12 minutes, stirring occasionally, until golden and soft. Remove from skillet.

2️⃣ Cook the Burger Patties

  • Season patties with salt and pepper.
  • In the same skillet, cook patties 3–4 minutes per side (or to desired doneness). Remove and set aside.

3️⃣ Assemble the Patty Melts

  • Butter one side of each bread slice.
  • On the non-buttered side, layer: slice of cheese → cooked patty → caramelized onions → another slice of cheese → bread (buttered side out).

4️⃣ Grill the Sandwiches

  • Heat the skillet over medium heat.
  • Cook sandwiches 3–4 minutes per side, pressing slightly with a spatula, until bread is golden brown and cheese is melted.

5️⃣ Serve

  • Cut in half and serve hot.
  • Optional: serve with pickles, fries, or a dipping sauce.

Tips & Variations

  • Add sautéed mushrooms for an extra flavor boost.
  • Use a mix of cheeses: Swiss + cheddar for a richer melt.
  • For a crispier exterior, brush the skillet with a bit of butter while grilling.
